medium summer squash (washed and julienned) 3 tablespoons
chopped fresh basil 4 tablespoons
fresh grated parmesan cheese 1⁄4 cup
red wine vinegar 1 tablespoon
chopped garlic scapes (or 2 teaspoons minced garlic) 1⁄4 cup
olive oil 1⁄2 teaspoon
salt 1⁄4 teaspoon
pepper 1⁄4 teaspoon

Instructions
Combine the squash, basil, cheese and garlic in a bowl. Whisk together remaining ingredients, and pour over squash mixture. Chill for one hour, then serve.
