small squash (patty pan or small zucchini, chopped) 12
mushrooms (chopped) 6 cups
chicken broth (vegetable broth for vegan version) 1 teaspoon

Instructions
Coat the bottom of a saute pan with olive oil. Saute onions until translucent. Add garlic and saute until fragrant. Add remaining vegetables and cook until slightly softened. Add prepared lentils and broth, and simmer for a few minutes. Add curry paste and salt to taste, and serve. (Recipeā¦540)
