Ingredients
 3 cans
 organic beans (such as cannelloni, kidney, black beans, or garbanzo/chickpea) 1 
 red onion, diced 2 
 celery stalks, chopped finely 1⁄2 bunch
 parsley 1⁄2 cup
 apple cider vinegar 1 tablespoon
 sweet vinegar 1⁄4 cup
 olive oil 2 cloves
 garlic, minced 1 teaspoon
 salt 1 tablespoon
 waterInstructions
Rinse and drain the beans in a colander. Chop and stir the veggies. You can substitute or add more celery, zucchini, kale, or other fresh veggies you have on hand. Set aside.
Make the dressing by mixing the vinegars, oil, garlic, salt and water. Stir vigorously.
