Ingredients
16 packages
cauliflower cream, thawed (*see note on how to make your own) 2 packages
spinach (fresh or frozen) 1 tablespoon
olive oil 1
onion 1⁄2 teaspoon
sea salt 1⁄2 teaspoon
nutmeg (fresh ground or dried)Additional Notes
*If you don't have access to cauliflower cream, make your own at home by boiling a chopped cauliflower head in salted water and blending until smooth. I (Jim) have found frozen cauliflower cream at Wegman's in their frozen organic section. Ingredients: cauliflower, water, salt.
Instructions
Peel the onion, halve, and slice. Warm the oil in a large skillet over medium heat. When glistening, saute the onion until soft but not browned. Add the cauliflower cream, salt and nutmeg, and bring to a bubble. Mix in the spinach, one bag/bunch at a time, allowing the cream to come back to a bubble. When all the spinach is mixed in, reduce the heat to warm. Cover and simmer for 5-10 minutes. It's best to let this rest for a few minutes before serving. (Recipe♦354)
