Cucumber Avocado Salad

Ingredients

large English cucumber
1
avocado
1⁄2
lemon (juiced)
1 clove
garlic (crushed)
1 tablespoon
extra-virgin olive oil (more to taste)
 
sea salt (to taste)

Instructions

Peel and chop the cucumber into bite-sized pieces. Peel, pit and slice the avocado into bite-sized pieces.

Add the lemon juice, garlic, salt and olive oil and gently mix everything together.

Taste to make sure you have the correct balance of lemon, oil and salt; adjust to taste if needed.  (Recipe #338)
