large bananas, not too ripe 1
red bell pepper, seeded and diced 1
orange pepper, seeded and diced 1
yellow pepper, seeded and diced 1⁄4 cup
fresh cilantro, chopped 4
green onions, finely chopped 1
lime, juiced 1
lemon. juiced 1 tablespoon
coconut crystals (or brown sugar) 1 tablespoon
freshly grated ginger 1 tablespoon
olive oil 1 tablespoon

Instructions
Place the chopped vegetables in a large bowl. Whisk together the juices, coconut crystals, ginger, olive oil, pepper/hot sauce and salt, and toss well. Just before serving, peel and dice the bananas and toss in. (Recipe♦166)
