leafy greens (spinach, kale, chard) 1 cup
leftover roasted vegetables 1 cup
cooked lentils 1 cup

Instructions
Heat olive oil in a skillet over medium heat. Saute tomatoes until they start to brown, about 4 minutes. Remove to a plate. Saute the greens for about 4 minutes. Remove to a plate. Warm the roasted vegetables, mushrooms and lentils, individually or in sections of the same pan.
