Vegan Full English Breakfast

Typically the Full English includes Bacon, Black “pudding”, Bangers and Eggs. But the vegan accompaniments are wonderful – with or without the meat.

grape tomatoes (halved)
4 cups
leafy greens (spinach, kale, chard)
1 cup
leftover roasted vegetables
1 cup
cooked lentils
1 cup
cooked mushrooms


Heat olive oil in a skillet over medium heat. Saute tomatoes until they start to brown, about 4 minutes. Remove to a plate. Saute the greens for about 4 minutes.  Remove to a plate. Warm the roasted vegetables, mushrooms and lentils, individually or in sections of the same pan.
