Summer Squash with Sun-dried Tomatoes

Ingredients

small summer squash (enough to make 8 cups chopped)

sun dried tomatoes
1
yellow onion (sliced thinly)
4 cloves
garlic (crushed)
10
leaves of basil (chopped)
 
salt and pepper (to taste)
 
olive oil (enough to coat the pan)

Instructions

Heat a medium saucepan with olive oil over medium heat. Stir in crushed garlic, squash, onions and tomatoes. Stir fry veggies for a few minutes. Add the basil, salt and pepper. Add a little water if the pan is dry, cover and allow to steam for a couple minutes. Test for doneness and add fresh basil just before serving.  (Recipe #798)
