beets (peeled) 3
celery stalks (chopped) 1⁄2 cup
pitted dried dates (chopped) 3 tablespoons
lemon juice 1 tablespoon
olive oil 1⁄4 teaspoon
sea salt 1⁄4 teaspoon

Instructions
Mix dates, lemon juice, oil, salt and pepper in a large bowl. Stir in chopped celery.
Shred the beets using spiralizer or food processor, and gently stir them into the mixture. Garnish with celery leaves and serve. (Recipe #761)
