Ingredients

beets 6
carrots (mixed colors are fun, but not necessity) 1
parsnip 3
citrus fruits (orange, grapefruit, or tangerine, etc)Additional Notes

Instructions
Peel root vegetables. Using a spiralizer, mandolin, or food processor, finely shred the roots. Peel and segment the citrus fruit. Cut larger segments into bite-sized pieces. Toss roots, citrus, and vinaigrette together. Serve. (Recipe #691)
