Quick Pickled Red Onions

A tangy burst of flavor to top any dish!


medium red onion
1⁄2 teaspoon
3⁄4 cups
white balsamic or apple cider vinegar
1 clove
garlic, peeled and crushed (optional, adds flavor)
sprigs fresh thyme (optional, adds flavor)
black peppercorns (optional, adds flavor)


Thinly slice the red onions and place in a mason jar with any optional flavorings. Sprinkle the salt on top of the onions, and pour in the vinegar. Screw the lid on the mason jar and shake to combine. If the onions are not covered with the brine, add a spash of water. Set them in the refrigerator over night and they're done! Stores for up to a month in the refrigerator.   (Recipe #668)
