purple regular or sweet potatoes 1⁄2 teaspoon
salt 1 tablespoon
olive oil 1 teaspoon
dried hers (oregano, Herbs de Provence, or the like)Instructions
Preheat the oven to 400 degrees. Wash and thinly slice the potatoes. A mandolin or spiralizer works nicely here. Mix the salt, herbs, and olive oil in a large bowl. Mix the potatoes in the bowl, coating each with oil. Tip: the longer you mix, the less oil you need. Spread the potatoes thinly in one layer on a baking sheet (lined with parchment paper makes easier cleanup). Bake for 5 minutes. Check, turn, and check again. Depending on the moisture content of the potato, they may crisp up in as little as 7 to 20 minutes. Once they are dry, they can burn quickly, so keep a close eye on them. (Recipe #662)
