An easy twist on a simple classic. (Recipe #570)

Ingredients
2 cans
tuna (aim for sustainably fished, pole-caught; Albacore is a good brand) 1
small onion (diced) 2
celery stalks 1⁄4 cup
oil-cured olives 2 tablespoons
olive oil 2 tablespoons
mayonaise (optional, see recipe: "Homemade Mayonnaise" for Whole30) 1 teaspoon
dried tarragonYields:
Instructions
Chop onion, celery, olives. Drain tuna. Mix tuna, onion, celery, olives & tarragon in a large bowl. Top with olive oil (and optional mayonnaise).
Mix well and serve on lettuce leaves.
