Mashed Cauliflower

Ingredients

heads of cauliflower (washed and cut into large pieces)
2 tablespoons
olive oil or coconut oil
1⁄2 teaspoon
sea salt
 
black pepper (to taste)
4 cloves
garlic (smashed; optional)
4
carrots (chopped; optional)

Instructions

Steam the cauliflower pieces (and optional garlic and carrots) until very tender. 

Puree in a food processor, or simply mash with a potato masher or hand blender. Add in oil, salt and pepper.                                                                                                                                      

                                                                                                  To eat later, reheat in a casserole dish in a 350° oven for 20 minutes.   (Recipe♦562)
