Late Summer Green Salsa

Ingredients

tomatillos (peeled and boiled, then iced)
1
small red onion (finely chopped)
2 cloves
garlic (minced)
1
jalapeno pepper (minced)
1⁄2 cup
chopped fresh cilantro
1⁄4 cup
chopped fresh spearmint
2
avocados (diced)
1
additional avocado
2
limes (juiced)
 
salt and pepper (to taste)

Instructions

Dice the chilled tomatillos and capture their juices, setting the juices aside. Combine the next six ingredients with the tomatillos. Set aside.

Mash the third avocado and blend it with the lime juice and the captured juices from the tomatillos. Combine this dressing with the tomatillo mixture.  (Recipe #526)
