kale (rubbed) 1 teaspoon
coarse salt 1
lemon (juiced and zested) 1⁄2 cup
olive oil 1 cup
currants 1 cup
chopped walnuts 1 cup

Instructions
Chop the kale and place it in a large bowl. To rub it, sprinkle on ½ to one teaspoon of coarse salt. Lift and rub the kale through your fingers for one minute until the color comes up bright green.
In a small bowl, whisk the lemon juice, lemon zest, and olive oil to make a dressing.
Fold the remaining ingredients into the kale, and toss the salad with the dressing. (Recipe♦506)
