Gina's Vegan Lentil Burgers

Ingredients

8
carrots (shredded in food processor)
2
sweet onions (shredded in food processor)
1 pound
dry lentils (cooked until soft, then drained)
8 cloves
garlic (minced)
1
sweet potato (cooked, then mashed up)
1 cup
salsa
 
salt and pepper to taste
 
garlic powder to taste
 
olive oil to coat pan

Instructions

Preheat oven to 350°F. Combine all ingredients and form into patties. Bake on a cookie sheet for about 20 mins. Carefully flip over the patties and cook an additional 20 - 30 mins.                 

These burgers make a delicious and protein-rich salad topping:  Place mixed greens, shredded carrots and sliced bella mushrooms in a bowl and dress as you wish. Chop or crumble 1or2 patties on top of the salad for a nice crunch.  (Recipe♦432)
