fava beans (fresh or frozen) 1⁄4 cup
olive oil 1⁄4 cup
freshly squeezed lemon juiceYields:
Instructions
Cook fresh or frozen favas in a boiling pot of salted water for 3 mins. Transfer the beans to a bowl of ice water, then peel each one by pinching off the outer skin (the bean should pop right out).
In a food processor, puree the fava beans with olive oil and lemon juice until smooth. Season with salt. (Recipeā¦398)
