Curry Base

Ingredients

2 teaspoons
cardamom
2 tablespoons
coriander
3 tablespoons
cumin
1 tablespoon
chili powder
 
oil (or preferred fat to coat well the bottom of a large frying pan)
2
onions (processed or minced)
6 cloves
garlic (processed or minced)
 
2" piece ginger (processed or minced)
Yields:
cup

Instructions

Coat the frying pan generously with preferred fat or oil. Heat and add in powder spices and stir constantly for about a minute, they will become fragrant, don’t let them get smoky. Add the onion, ginger, and garlic and cook for 3 minutes, stirring a few times.  (Recipe #349)
