Cucumber Salsa

Ingredients

large cucumbers (peeled or unpeeled*, diced)
1⁄4 cup
red onion (minced)
1⁄2 bunch
fresh cilantro (chopped)
6 drops
stevia (or to taste)
3 teaspoons
toasted sesame oil
3 tablespoons
fresh lime juice
2 tablespoons
fresh ginger (grated)
2 tablespoons
minced jalapeno pepper (optional)

Additional Notes

*To decide if you should peel a cucumber, taste it. If it’s bitter, peel it. If it’s waxed, peel it. Ideally you’ll have fresh, organic cukes that don’t need peeling (although you might want to, for digestive reasons).

Instructions

Combine the cucumbers, onion, jalapeno (if using) and cilantro in a bowl and set aside. Whisk together Stevia, sesame oil, lime juice and grated ginger. Toss with salsa ingredients. (Recipe♦341)
