Cucumber Salad


1 cup
freshly squeezed orange juice
large cucumbers (roughly chopped)
1⁄4 cup
olive oil
1 bunch
fresh mint (torn or chopped)
salt and pepper (to taste)

Additional Notes

You can substitute 4 baby cucumbers for each large one.


Simmer orange juice until reduced to ¼ cup, then let cool slightly. Toss cucumber slices with juice, oil, and mint. Add salt and pepper to taste, if desired.  (Recipe♦339)
