Breakfast Challenge Scrambled Tofu

1 teaspoon
coconut oil (or enough to coat the pan)
2 cups
chopped vegetables (onion, leeks, peppers, mushrooms, greens, tomato, fresh herbs or whatever you have on hand.)
3⁄4 cups
firm or extra firm tofu (crumbled)
1⁄2 teaspoon
curry powder (or turmeric powder)
salt and pepper (to taste)
other seasonings (optional: hot sauce, herbs de Provence, Old Bay)


Heat oil in a small pan over medium heat. Add vegetables and saute for 3 mins. Add the tofu, salt and pepper and seasonings of choice. Cook, stirring occasionally for 3 mins until heated through.  (Recipeā™¦216)
