Avocado, Coconut Milk & Lime Ice Cream


1 can
full fat coconut milk (refrigerated)
avocados (peeled and pitted, then cubed and frozen for at least 2 hours)
1⁄2 cup
lime juice (from about 5 limes)
1 tablespoon
lime zest
1 tablespoon
vanilla extract
sweetener of choice: 2 tablespoons maple syrup or honey or 2 teaspoons powdered monkfruit or 10 drops liquid stevia
1⁄4 cup
1/2 cup servings


Place all ingredients into a blender or food processor and blend until smooth. Scrape down the sides a few times to get a smooth texture.
