Arugula Pesto

Ingredients

1 bunch
arugula (6 oz)
2 cloves
garlic (chopped)
1⁄3 cup
pine nuts
 
fresh herbs of your choice (optional)
1⁄2 cup
olive oil
1⁄2 teaspoon
salt
 
black pepper (to taste)
1⁄4 cup
parmesan cheese (optional)

Instructions

Process the pine nuts until coarse. Process together all ingredients. Serve a small dollop with salmon burgers or veggie burgers.  (Recipeā™¦135)
