Vegetable Mock Tuna Salad

Ingredients

serving of Aioli Mayo (see link below for recipe)
3 cups
shredded carrots (from about 1 lb)
1 cup
finely chopped celery
1⁄4 cup
chopped yellow onion

Instructions

Shred carrots in food processor. Place the Aioli Mayo, shredded carrots, chopped celery, and chopped onion in mixing bowl. Mix well. Place in romaine lettuce leaves as sandwiches.  (Recipe #878)
