arugula 6
strips bacon (diced) 2
shallots (diced; can use 1 small onion in place of 2 shallots) 1⁄4 cup
extra virgin olive oil 1 tablespoon
balsamic vinegar 1⁄2 cup
walnuts or pecans (chopped)Yields:
Instructions
Brown the diced bacon in a frying pan until mostly crisp. Add shallots (or onion) and sauté with bacon. Add oil and heat until warm. Pour mixture over arugula, add balsamic vinegar and mix well. Add salt and pepper to taste, top with nuts, and serve immediately. (Recipe #888)
