Vegan Coconut Cream Mayonnaise Dressing


1 can
full fat organic coconut milk (use only the cream)
3 tablespoons
fresh lime juice (1 large or 2 small limes)
2 tablespoons
olive oil
2 tablespoons
tahini or almond butter
1 teaspoon
ground pepper (to taste)


Whip the ingredients together in a high speed blender. Use as a salad dressing with chicken or tuna.  (Recipe #861)
