 quinoa (12 oz) 2 
 medium yams (cooked, peeled and cubed) 1 
 large red pepper (cored and diced) 5 
 scallions (chopped) 3 ounces

Instructions
Cook the quinoa by package directions. Microwave yams with skin until soft. Cool, peel and cube. Combine all ingredients. Add salt to taste. Sprinkle with cashews. (Recipe #797)
