Ingredients
1⁄4 cup
chia seeds 1 tablespoon
vanilla extract 1⁄2 cup
cashews (soak in water for 2-6 hours, drained and rinsed) 1 1⁄2 cup
water 1⁄4 teaspoon
sea salt 1 can
pumpkin (14-16 ounce can) 1 tablespoon
pumpkin pie spice dash
sweetener of choice (monkfruit or maple syrup)Yields:
Instructions
Put all ingredients except chia seeds in a blender and blend until completely smooth. \
Pour into bowl and add chia seeds.
Let sit for 10 minutes, whisking a few times to prevent clumping.
Leave in the fridge for 2 hours or until completely chilled.
Remove and divide into bowls.
Store leftovers in the fridge for up to 5 days.
Garnish with berries if you'd like.
