Paleo Bread with Almond Meal

“Here’s a gluten free bread recipe, made of high protein ingredients that won’t leave you dragging. This bread is just a bit lighter and fluffier than my other breads. It has a nice nutty flavor from the flax meal, which makes it almost have a kind of 'whole wheat' thing going on.” - Elana



2 cups
blanched almond flour
2 tablespoons
coconut flour
1⁄4 cup
golden flax meal
1⁄4 teaspoon
Celtic sea salt
1⁄2 teaspoon
baking soda
1 tablespoon
coconut oil
1 tablespoon
honey (or 10-20 drops stevia for low carb version)
1 tablespoon
apple cider vinegar

Additional Notes

This recipe calls for a 7.5 x 3.5 magic line loaf pan. If you don't use this recommended size, your bread will not be the proper height.


Place almond flour, coconut flour, flax, salt and baking soda in a food processor and pulse ingredients together. Pulse in eggs, oil, honey (or stevia) and vinegar.

Pour batter into greased magic line loaf pan. Bake at 350 degrees for 30 minutes. Cool and serve.  (Recipe #605)
