An easy snack for eaters of all ages!
Ingredients
1 cup
quick oats 1 cup
shredded coconut (unsweetened) 1⁄2 cup
creamy nut or seed butter (peanut, almond, cashew, sunflower) 1⁄4 cup
mini dark chocolate chips (optional - or can add chopped dried fruit) 1⁄3 cup
honey or pure maple syrup 1 teaspoon
vanilla 1⁄4 teaspoon
cinnamon (more if desired)Instructions
1. Add all ingredients in a large mixing bowl and stir until combined.
2. Form into 1-inch balls. (Refrigerate for 10-15 minutes if too sticky, and then roll into balls.)
3. Store in refrigerator.
Variations
If you use almond butter instead of peanut butter – may have a dryer consistency.
Replace ½ cup of shredded coconut with ½ cup of sliced almonds – pureed in a food processor or blender.
Add 2 tablespoons of flax or chia seeds – you may need to add more nut butter for better consistency.
