wild rice (cooked) 2
celery stalks (finely sliced) 1
red pepper (diced small) 1 cup
sprouts (such as mung beans) 1 cup
almonds (coarsely chopped) 1
fresh cilantro (chopped) 1
spinach (coarsely chopped) 1
tart apple (diced small) 1
lemon juice (or to taste) 1
goat milk cheddar (shredded; this is optional)Yields:
Instructions
Combine all ingredients except the apple and lemon juice, and place in a large shallow bowl. Sprinkle a little lemon juice on the apple as soon as you dice it to delay browning. Add to the salad. Serve with Garlic Dijon Dressing. (Recipe #566)
