red onion (minced) 2 cloves
garlic (minced) 1 cup
cooked lentils 3
plum tomatoes (diced) 1 tablespoon
ground coriander 1 tablespoon
ground cumin 1 package
firm or extra firm tofu (diced) 1⁄2 bunch

Instructions
In a large saute pan, heat the oil. Add the onion, garlic and ginger and saute until the onion is translucent. Add the lentils, tomatoes, coriander, cumin, salt, and pepper. Mix well to combine. Let simmer for 5 mins. Add the tofu and cook for another 2 - 3 mins. Garnish with cilantro. (Recipeā¦538)
