chicken (sautéed in olive oil until just done ) 2 cups
almonds (chopped) 1
small jicama (chopped) 1
red pepper (chopped) 3
fennel bulbs (shredded) 1 bunch
parsley (chopped) 1 bunch
kale (shredded fine) 1

Instructions
Chop or pull apart cooked chicken into bite-sized pieces. Prepare remaining ingredients and combine with chicken in a large serving bowl.
