Chopped Chicken Salad

Ingredients

4 pounds
chicken (sautéed in olive oil until just done )
2 cups
almonds (chopped)
1
small jicama (chopped)
 
several cherry tomatoes
1
red pepper (chopped)
3
fennel bulbs (shredded)
1 bunch
parsley (chopped)
1 bunch
kale (shredded fine)
1
fresh herbs (if available)
Yields:

Instructions

Chop or pull apart cooked chicken into bite-sized pieces. Prepare remaining ingredients and combine with chicken in a large serving bowl. 

Toss salad with Tangy Apple Cider Dressing and serve.  (Recipe♦284)
