Celery Root "Pasta" with Pesto and Radicchio

Celery Root (sometimes called Celeriac) makes a fresh, healthy and gluten-free alternative to pasta.


celery root
head of raddicchio
1 tablespoon
olive oil
1 tablespoon
pesto (store bought or see link below for recipe)


Using a large knife, trim the dirt and skin off the celery root: (1) Cut off the top and bottom so you have a level surface to rest the root on (2) Working downward, slice the skin off like you are cutting the skin off a pineapple. This may take six to eight cuts on the bottom, turning the root over for another six to eight slices.

Spiralize the root into spaghetti-sized noodles. Shred the radicchio.

Preheat pan over medium heat. Add the olive oil and celery root. Cook 5 minutes covered, stirring occasionally. Add the radicchio and cook until wilted, 2 - 3 minutes. Stir in the pesto and serve.  (Recipe♦249)
