beets, cleaned and shredded 1
red cabbage, shredded in food processor 4
Granny Smith Apples, chopped 1
lemon, juiced 1 cup
chopped walnuts 1⁄2 cup

Instructions
Toast chopped walnuts and set aside to cool slightly.
Toss the chopped apples with lemon juice so they don’t oxidize, and set aside.
Combine beets and cabbage in a large bowl then add all the other ingredients.
Serve with Boiled Cider Dressing and toss well. (Recipe♦181)
